The highest point in Pyrgos has to be from the walls of the old Venetian Castle (Kastelli). In fact this is the highest (publicly accessible) point on the island.
The castle is built on top of the hill, so gives these great views across the island. In common with other four castles on the island the Kastelli of Pyrgos has a church at the entrance, and also a series of passageways below for protection from invaders.
The square just outside the entrance to the castle is known as the 'High Up Coffee Shop' (not in an Amsterdam sense you understand!) and is of course a great spot to enjoy... a coffee, high up.
If you are luck enough to be visiting at Easter time you may get to see the whole castle lit up with burning torches, along with the hillsides, along with a burning effigy and fireworks in the square.
